Rich in healthy fats from extra virgin olive oil, brightened with fresh lemon- completely free from artificial ingredients, this is a staple you'll find yourself making again & again.
Ingredients
1 cup extra virgin olive oil
1 tablespoon white wine vinegar (or apple cider vinegar if you prefer a tangier flavour)
1 large egg
Juice of 1 whole lemon
1 teaspoon pink himalayan salt
1-2 teaspoons black pepper dependant on your personal preference of taste
A few pinches of onion powder
Optional: 1–2 teaspoons of brown/unrefined sugar for a slightly sweeter mayo.
Method
Add all of the ingredients to a high-speed blender.
Blend on high for 2–3 minutes until smooth & creamy.
Your mayo will seem quite runny at first—don't worry, it will thicken in the fridge.
Transfer to a clean glass jar or airtight container.
Storage🤎
Keep refrigerated in an airtight glass jar.
Best enjoyed within 2 weeks.
