Skip the ultra-processed supermarket mayo packed with seed oils, preservatives, hidden sugars & unnecessary additives. This homemade version takes just a few minutes to make using wholesome ingredients you probably already have in your kitchen!

Rich in healthy fats from extra virgin olive oil, brightened with fresh lemon- completely free from artificial ingredients, this is a staple you'll find yourself making again & again.

Ingredients

  • 1 cup extra virgin olive oil

  • 1 tablespoon white wine vinegar (or apple cider vinegar if you prefer a tangier flavour)

  • 1 large egg

  • Juice of 1 whole lemon

  • 1 teaspoon pink himalayan salt

  • 1-2 teaspoons black pepper dependant on your personal preference of taste

  • A few pinches of onion powder

  • Optional: 1–2 teaspoons of brown/unrefined sugar for a slightly sweeter mayo.

Method

  1. Add all of the ingredients to a high-speed blender.

  2. Blend on high for 2–3 minutes until smooth & creamy.

  3. Your mayo will seem quite runny at first—don't worry, it will thicken in the fridge.

  4. Transfer to a clean glass jar or airtight container.
