Strawberry, raspberry & cherry jam🤎
A rich & naturally sweet homemade preserve.
A delicious addition to my baking recipes.

Makes
Approximately 1 medium jar (around 400–500g)
Ingredients
1 cup fresh strawberries, chopped
1 cup fresh raspberries
1 cup fresh cherries, deseeded/chopped
Juice of 1 whole lemon
½ cup unrefined brown sugar
1 tbsp local, natural honey
Method
1. Prepare
Wash all of the fruit thoroughly. Hull & chop the strawberries & raspberries, remove the stones from the cherries & squeeze the juice from one whole lemon.
2. Cook
Place all ingredients into a stainless steel saucepan.
Cook over a medium heat, stirring regularly until the sugar has dissolved & the fruit begins to soften.
3. Mash
Using a potato masher or fork, gently mash the softened fruit to your preferred consistency.
4. Reduce
Lower the heat, allowing the jam to simmer gently for 10–15 minutes, stirring frequently to prevent it from catching.
As the fruit reduces, the mixture will become thicker & become more syrup-like. Before developing into a rich, spreadable jam.
5. Jar
Remove from heat & carefully spoon the hot jam into a sterilised glass jar.
Allow to cool completely before using.

Storage
Spoon into a sterilised glass jar while still warm.
Once cooled, seal with a lid & refrigerate.
Keeps for up to 2 weeks in the fridge.

Jordanna's tip
For a smoother jam, mash the fruit well during cooking. If you prefer a chunkier preserve, leave a few larger pieces of fruit for extra texture. This jam is delicious spread on my homemade bread recipe, layered into my Victoria sponge recipe, or served with my fluffy New York-style pancakes.
