Rhubarb, strawberry & cherry jam🤎

A sweet & tangy homemade preserve. My jams are made with simple, wholesome ingredients & naturally sweetened.

A delicious addition to my baking recipes.

Makes

Approximately 1 medium jar (around 400–500g)

Ingredients

  • 1 cup fresh strawberries, chopped

  • 1 cup fresh cherries, deseeded and chopped

  • 1 stalk fresh rhubarb, diced into 3cm pieces

  • Juice of 1 whole lemon

  • ½ cup unrefined brown sugar

  • 1 tbsp local, natural honey

Method

1. Prepare

Wash all of the fruit thoroughly. Chop the strawberries, remove the stones from the cherries & dice the rhubarb into approximately 3cm pieces. Squeeze the juice from one whole lemon.

2. Cook

Place all ingredients into a stainless steel saucepan & cook over a medium heat, stirring regularly until the sugar has dissolved & the fruit begins to soften.

3. Mash

Using a potato masher or fork, gently mash the softened fruit to your preferred consistency.

4. Reduce

Lower the heat & allow the jam to simmer gently for 10–15 minutes, stirring frequently to prevent it from sticking or burning.

As the fruit reduces, the mixture will become glossy, thick & spreadable.

5. Jar

Remove from the heat & carefully spoon the hot jam into a sterilised glass jar.

Allow to cool completely before eating.

Storage

  • Spoon into a sterilised glass jar while still warm.

  • Allow to cool completely before sealing with a lid.

  • Store in the refrigerator for up to 2 weeks.

  • Always use a clean spoon when serving to help keep the jam fresh.

Jordanna's tip

This jam is wonderful spread over warm homemade bread, spooned into natural yoghurt or layered into my classic Victoria sponge recipe. The rhubarb adds a subtle tang that perfectly balances the sweetness of the strawberries & cherries, creating a beautifully rounded flavour.
