Crispy waffles🤎

Golden, crispy on the outside & light on the inside – these homemade gluten-free waffles are perfect for breakfast, brunch or a wholesome sweet treat. Serve with fresh fruit, yoghurt, honey or homemade jam.

4-6 waffles (depending on size of waffle maker.)

Ingredients

  • 150g rice flour

  • 50–100ml coconut milk (depending on desired thickness)

  • 2 heaped tablespoons brown or unrefined sugar

  • 1 teaspoon gluten-free baking powder

  • 2 free-range eggs

  • 1 teaspoon olive oil

Method

  1. Add all of the ingredients to mixing bowl & whisk until you have a smooth batter.

  2. The consistency should be thick but pourable. If the batter feels too thick, add a little more coconut milk. If it's too runny, add a little extra rice flour until it reaches your preferred consistency.

  3. Lightly grease & preheat your waffle maker.

  4. Pour enough batter into the waffle maker to cover the plates without overfilling.

  5. Close the lid & cook until the waffles are golden brown and crispy on both sides. Cooking times will vary depending on your waffle maker.

  6. Carefully remove & enjoy warm with your favourite toppings.

Jordanna's tip

For extra yumminess, top your waffles with fresh berries, a dollop of natural yoghurt, a drizzle of local honey, a spoonful of nut butter or pair with any of my delicious/low sugar jam recipes. They also freeze beautifully—simply allow them to cool completely before freezing and reheat in a toaster for a quick brekkie!
